Summer is the season of al fresco dinners, backyard gatherings, and savoring Maryland’s famous crab-inspired flavors—without the shellfish! I know, I know—but why?

For many of us, food allergies and dietary restrictions are part of daily life. Whether you're hosting family or friends, creating an inclusive menu ensures everyone can enjoy the moment—and the meal. It starts with one simple (but essential) question: Does anyone have a food allergy or sensitivity? That early check-in lets you plan for food safety right from the start.

And remember—it’s absolutely okay if your guest with allergies prefers to bring their own food. For many people, managing a food allergy is stressful, and bringing something familiar can offer peace of mind. Don’t take it personally. In fact, offering that flexibility up front can be a huge relief. The goal is for everyone to feel safe, included, and able to relax and enjoy the gathering—whatever that looks like for them.

The most common food allergies, often called the “Big 9,” include milk, eggs, peanuts, tree nuts, wheat, soy, fish, shellfish, and sesame, which account for the majority of serious allergic reactions.

A Note on Food Sensitivities

Even though food sensitivities aren't the same as allergies, they can still significantly impact someone’s comfort and well-being. While allergies involve the immune system and can be life-threatening, sensitivities often cause digestive issues, headaches, fatigue, or general discomfort. Being mindful of both shows care and respect for your guests—it’s about creating a welcoming, inclusive environment where everyone can relax and enjoy the gathering without worry. Thoughtfulness around food isn’t just about safety—it’s about hospitality.

Allergy-Safe Hosting Starts in the Kitchen

Being mindful of cross-contact is essential when cooking for guests with food allergies. When I’m preparing meals for friends with allergies, these steps always guide me:

  • Start Fresh: Clean all surfaces, tools, and utensils before you begin.
  • Prep Allergy-Safe Foods First: Avoid cross-contact by preparing these dishes before others.
  • Separate Workspaces: If possible, use a different countertop and set of cutting boards for allergy-friendly dishes.
  • Dedicated Tools: Keep knives, utensils, and cookware separate—or use disposable versions when needed.
  • Wash Up Thoroughly: After handling shellfish or other allergens, scrub hands and surfaces with hot, soapy water before touching anything else.
  • Cook Separately: Use separate pans and never reuse oils, broths, or grill surfaces for allergy-safe dishes.
  • Label and Store Clearly: Keep allergen-free items separate and marked so there’s no confusion.
  • Communicate with Your Team: If you're hosting with helpers, make sure everyone understands the allergy protocol.

Party Planning: Allergy-Safe Tips for Outdoor Entertaining

  • Inform and Involve: Let guests know what's in each dish—and offer allergy-friendly options for all to enjoy.
  • Label Dishes Clearly: Bonus points for little signs or markers that show which dishes are safe for which allergens. 
  • Use Separate Serving Utensils: Avoid accidental mixing by assigning specific spoons or tongs to each dish.
  • Read Labels on Packaged Foods: Double-check every ingredient for hidden allergens.
  • Create Allergy Zones: That sounds grand, but really we’re talking about putting different food on different tables, or even in different rooms. At a minimum, designate a section of the table or buffet just for allergy-safe dishes. 
  • Communicate Clearly: Consider adding a sign letting guests know that they must use provided utensils to avoid cross contamination. 
  • Have Emergency Plans Ready: Keep antihistamines or EpiPens on hand and know where they are. 

Shellfish-Free, Maryland-Inspired Appetizers Everyone Can Enjoy

  • Crab-Style Dip (No Crab Needed): Use hearts of palm or jackfruit, seasoned with Old Bay, lemon, and horseradish.
  • Zesty Veggie Platter: Serve a rainbow of fresh veggies with a herbed Old Bay Ranch or tangy tzatziki dip.
  • Baltimore-Style Chicken Skewers: Marinate chicken in classic Maryland seasoning, then grill and serve on skewers.
  • Lobster-Style Toasts: Swap lobster for marinated hearts of palm or tofu, then top with avocado and a squeeze of lemon.
  • Cucumber Cups with Smoked Salmon & Dill: Light, cool, and packed with flavor.
  • Bluefish Spread on Endive: A briny, herby bite with a horseradish kick—no crackers required.

Celebrations are all about connection, and everyone deserves a seat—and a safe plate—at the table. With a little planning, some creative swaps, and thoughtful prep, your summer gatherings can be both inclusive and unforgettable.
